  • 1 Place cauliflower florets in a rectangular dish just large enough to hold them in a single layer. Cover tightly with microwave plastic wrap. Cook at 100% for 7 minutes.
  • 2 Remove from oven. Uncover and place in the workbowl of a food processor with peeled, sliced potato, if desired. Process until smooth with cream and salt to taste.
  • 3 Sprinkle chives, if desired, on top or stir in.


  • Makes 2 cups (3 cups with potato added)
