Apple Cheese Souffle

  • 1. Preheat oven to 375 degrees.
  • 2. Sauté apples and onion in butter with the garlic and spices until soft. Stir in flour and salt and cook over low heat for a few minutes. Add milk and sherry. Beat with a wire whisk until the sauce is creamy and smooth. Remove from heat. Add cheese and walnuts.
  • 3. Prepare a 6-cup soufflé dish or a deep casserole dish by buttering it and lightly dusting it with bread crumbs or flour. Beat egg yolks and add to the apple mixture. Beat the egg whites and cream of tartar until stiff but not dry. Fold into mixture.
  • 4. Pour into the prepared dish. Reduce oven temperature to 350 degrees. Bake for 45 to 50 minutes. Serve immediately.
