Valentine's Cookie Cards

  • In a large mixer bowl, beat the butter and cream cheese until well blended and smooth. Add in the sugar, corn syrup, egg substitute, and extracts. Beat at medium speed, scraping the bowl often, until creamy, about 3 minutes. Reduce the mixer speed to low and add in the flour and salt. Continue beating until mixed, 1 to 2 minutes. Divide the dough into two portions. Wrap each portion in wax paper or plastic wrap, and refrigerate the dough for at least 2 hours or overnight.
  • On a lightly floured surface roll a portion of the dough into a 9" x 14" rectangle. Cut the dough into 15 or 16 rectangles (Valentine's cards) using a pastry wheel or sharp knife. Line two aluminum cookie sheets with foil. Coat the foil with nonstick cooking spray.
  • Cut out small shapes, small hearts or cupids, in the center of each card using tiny cookie cutters or plastic knives. Save the cutout shapes to decorate the dough portion of the Valentine's cards. Place the cookie cards on the prepared cookie sheets.
  • Place each of the different colored hard candies in their own sandwich bag and seal. Crush the candy into small bits using a hammer or wooden meat mallet.
  • Fill the cutout centers of the Valentines with enough crushed candy to evenly fill the holes. If using more than one color of candy, keep separated by color as best you can. You can decorate the dough portion of the Valentine's card with the extra dough shapes that were initially cut out--simply place them anywhere on the dough portion of the Valentine.
  • Bake the cookies for about 8 minutes or until the edges are very lightly browned and the candy is melted. Let cool completely before removing from the foil-lined cookie sheets. Repeat with the remaining dough and decorate baked, cooled cookies as desired.
